Shepherds Pie
This is a staple in our families dinner routine. It is fairly easy to prepare, and take little time to cook.
Ingredients:
- 1 1/2 lb mashed potatoes
- 1 lb ground beef
- 1/2 cup cheese
- 2 cups of frozen vegetables (peas and corn, sometimes carrots)
- 3/4 cups of beef broth or use 1/2 package of oxtail soup mix with 1 pint of water.
Directions:
- Cook potatoes and mash, set aside.
- Pre heat oven to 375 degrees F.
- Cook the ground beef.
- Add vegetables and beef broth to meat, and cook until vegetables are cooked.
- Spoon meat and vegetable mixture into an 8” baking dish.
- Cover with mashed potatoes and top with cheddar cheese.
- Place in oven and bake for 20 minutes or until heated through and cheese is melted.
