This is an excellent topping for french toast or pancakes.  Makes enough for one batch of pancakes (about 8).

Ingredients:

  • 1/2 cup water
  • 1/2 cup white sugar
  • 2 cups chopped strawberries (frozen or fresh)
  • 1/4 Tbsp vanilla
  • 1 Tbsp cornstarch

Directions:

  • Place water and sugar in small pot.
  • Bring to a boil stiring occasionally to dissolve sugar.
  • Add fruit and turn down heat to medium, cook for 10 minutes.
  • Dissolve cornstarch in a little bit of water (just enough to dissolve the water)
  • Turn heat to high and slowly stir in dissolved cornstarch to thicken mixture.
  • Serve with fresh french toast or pancakes.
