This is my favourite stew recipe. It is pretty simple but the flavour is delicious.

A stew is a combination of solid food ingredients that have been cooked in liquid and served in the resultant gravy.

Ingredients:

  • 1 lb beef Cube
  • Salt and pepper to taste
  • 5 medium potatoes
  • 3 long carrots cubed
  • 1 medium onion cubed
  • 1 tsp Oregano
  • 2 bay leaves
  • 1  Can of Beef
  • 1 Cup of Water
  • 2 cups of small mushrooms (optional)
  • 2 stalks of celery cubed
  • 1 Tbsp “Bistro gravy mix” (to thicken gravy after cooking)

***I like to get the whole tenderloin from Costco and cut steaks from it (seal them in bags and freeze for steak night), cut up and save the smaller end pieces for this recipe (best ever).

Directions:

  1. Cube up beef, place in Med-Large sized pot.  Add chopped garlic, salt, and pepper.  Turn heat to high and brown beef (the brown bits in the pot will help with the final color)
  2. Turn down n heat to low and add: potatoes, carrots, onions, oregano, beef broth.
  3. Cook for 1 hour (until 1/2 cooked). Stir occasionally
  4. Add celery and mushrooms, and continue to cook until meat and vegetables are tender.
  5. Once cooked, prepare Bistro by putting one heaping tbsp of Bistro into an glass, add a small amount of water to dissolve the Bistro.
  6. In the pot, using a large spoon move the large stew pieces out of the way to expose the liquid juices.  Add dissolved Bistro to the pot and stir with the juices (careful stirring can break apart the spuds).
  7. Simmer until ready to eat.  Enjoy with fresh tray buns.
