Donair

A Donair is a variation on the doner kebab. It was originally introduced in Halifax, Nova Scotia, Canada in the early 1970s. The meat and sauce are served rolled in a flat-bread pita with diced tomato and onion. The Donair is very popular throughout the Atlantic provinces of Canada.  This recipe makes about 12 donairs (I vacuum seal the meat in two bags – Makes 6 each).

Chili

This is my favourite Chili recipe. It was handed down from Toni, it may have been adjusted a little over the years. Chili is a spicy stew. The name “chili con carne” is taken from Spanish, and means “peppers with meat.” Traditional versions are made, minimally, from chili peppers, garlic, onions, and cumin, along with chopped or ground beef. Beans and tomatoes are frequently included.

Butter Tarts

A butter tart is a type of small pastry tart highly regarded in Canadian cuisine and considered one of Canada’s quint essential desserts. The tart consists of butter, sugar, syrup, and egg filled into a flaky pastry and baked until the filling is semi-solid with a crunchy top.

French Toast

French toast is a dish of bread soaked in eggs then fried, a weekend staple in many canadian families.  As a kid, I knew if the weekend started with French Toast then it was destined to be a great weekend.

Note: older bread will less likely produce soggy French Bread, as well the longer you soak the bread the more egg/milk mixture get to the middle producing a softer center.

Tarte au Sucre (Sugar Pie)

This is a french dessert that was given to my mom by a one of her french neighbours from Quebec.  This version has more of a creamy pudding type texture than the original versions.  This is a family Christmas specialty that everyone enjoys.  This treat can easily be frozen for future enjoyment.  Takes about 25 minute to prepare and makes about 4 pies or 60 small tarts.

Brownies

A chocolate brownie is a flat, baked square or bar.  The brownie is a cross between a cake and a cookie in texture.  Brownies come in a variety of forms. They are either fudge or cake “like”, depending on their density, and they may include nuts, frosting, chocolate chips, or other ingredients. A variation that is made with brown sugar and no chocolate is called a blondie.
