Hamburger Soup

This is by far my favourite soup.  It is a hardy soup that is great on a cold winter day.

Ingredients
  • 1 lb Ground Beef (Can use chopped beef (steak or roast))
  • 1 Medium Onion
  • 1 Large Carrot
  • 3 Stocks of Celery
  • 24 oz Diced Tomatoes (2 cans)
  • 2 cup Water
  • 1 l Beef Broth (About 3 cans or 1L)
  • 14 oz Tomato Soup (1 Can)
  • 8 tbsp Barley
  • 1 pinch Salt (to taste)
  • 1 pinch Black Pepper (to taste)
  • 2 Bay Leaves
Instructions
  1. Brown ground beef and onions, drain fat drippings. 
  2. Chopped vegetables, take diced tomatoes and chopped even more (I like to use a hand crank chopper, mine is from Tupperware).
  3. Combine cooked hamburger with all other ingredients in a large pot (cooking it in a pot needs to be stirred ALOT [a heavy duty thick bottom pot works best to prevent bottom from burning]. I prefer to use a crock pot). 
  4. Bring to a boil, then simmer uncovered until barley is cooked (approximately 1 1/2 hours). Taste frequently and add salt to taste.
  5. When cooked, turn off heat and add chopped green onions.
