Corn Fritters

Corn Fritters are a great little fried appetizer, this side dish is best served with steaks or similar dish; it can be made with apples instead of corn to make a nice dessert. ​

Ingredients
  • 2 Large Eggs
  • tsp White Sugar
  • tsp Canola Oil or Olive
  • 1/2 cup Milk 2%
  • 1/2 tsp Salt
  • tsp Baking Powder
Instructions
  1. Whisk eggs, add sugar and oil.
  2. Add milk into mixture, mix.
  3. Add drained corn, mix.
  4. In a separate bowl add flour, salt, and baking power; mix dry ingredients.
  5. Heat up oil in deep fryer.
  6. Just before cooking, mix together dry ingredients to the wet ingredients (baking power will react to create fluffy fritters).
  7. Use a tsp to portion out the fritter batter into the deep fryer.
  8. Serve with butter or jam.
