Corn Fritters
Corn Fritters are a great little fried appetizer, this side dish is best served with steaks or similar dish; it can be made with apples instead of corn to make a nice dessert.

Ingredients

Large Eggs

White Sugar

Canola Oil or Olive

Milk 2%

Baking Powder
Instructions

Whisk eggs, add sugar and oil.

Add milk into mixture, mix.

Add drained corn, mix.

In a separate bowl add flour, salt, and baking power; mix dry ingredients.

Heat up oil in deep fryer.

Just before cooking, mix together dry ingredients to the wet ingredients (baking power will react to create fluffy fritters).

Use a tsp to portion out the fritter batter into the deep fryer.

Serve with butter or jam.
