Mary Mac’s Carbonara Casserole

This is by far one of my favourite casserole dishes.  Mary McCormack has been making this for family events and I have been trying to duplicate it for a while now (mine is not quite there yet, soon).

Carbonara Casserole Mary

Ingredients:

        • 2 chicken breasts
        • 1 large onion
        • 1 cup chopped of mushrooms
        • 1/2 cup of diced yellow peppers
        • 1/2 cup of diced orange peppers
        • 2 diced green onions
        • 1 jar of Alfredo Sauce
        • 1 can of mushroom soup
        • 2 cloves of garlic, diced
        • 1 tsp of chilli flakes
        • 4 servings of fettuccine noodles (too much noodles makes the dish dry)
        • 2 cups of shredded marble or cheddar cheese (1 or in casserole and 1 for crust)

Directions:

        1. Dice up and cook chicken in frying pan. Place in the bowl.
        2. Dice up and cook onions until translucent.  Place in the bowl.
        3. Dice up mushrooms (to what ever size you like) and cook mushrooms 1/2 way.  Place in the bowl.
        4. Slice up peppers and cook 1/2 way Place in the bowl.
        5. Boil Fettuccine noodles, strain and add to a the bowl.
        6. Add 1/2 of the shredded cheese , add garlic to bowl.
        7. Add salt and pepper to large bowl, and mix all the ingredients together.
        8. Combine all other ingredients (use only half of the cheese) to bowl and mix.  Its ok if the mix is very liquidy, it dries up while it bakes in the oven).
        9. Place mixture in a lightly greased casserole dish, top with cheese.
        10. Cook at 350F for 1 hour.
