Jambalaya

Hands-down the best jambalaya recipe! It is surprisingly easy to make, customizable with your favorite proteins (I used chicken and Andouille sausage), and full of bold, zesty, Cajun jambalaya flavors that everyone will love.

  • Season chicken with some salt, pepper, Tony's, and smoked paprika
  • In a large heavy bottom pot, add 2-3 Tbsp of cooking oil, heat on medium high.
  • Cook chicken, remove and set aside.
  • Slice sausage and cook in pot. Remove and set aside.
  • Added diced onion, cook for 3 min. Then add garlic, cook for an additional 2 min.
  • Add peppers, celery. Cook for 5 mins. Scrapping bottom of pot.
  • Add tomato paste, cook for 2 min. Then add diced tomatoes.
  • Add rice and stir, allow rice to cook for 1-2 min.
  • Add chicken broth. Add remaining spices (Tonys, salt, pepper, bay leaves)
  • Bring to a boil, stir bottom to prevent sticking.
  • Cover and place in an oven set to 350F for 25 min.
  • Remove from oven, fold over while scrapping bottom of pot. Add green onions. Cover again and let sit for remaining 10 mins to ensure rice is nice and cooked.
