Pancakes

A pancake is a flat cake, often thin, and round, prepared from a starch-based batter that may also contain eggs, milk and butter, and cooked on a hot surface such as a griddle or frying pan, often in oil or butter.

Ingredients
  • 2 cup All purpose Flour
  • 4 tbsp White Sugar
  • 5 tsp Baking Powder (This is the secret ingredient that makes the pancakes fluffy)
  • 1 tsp Salt
  • 2.5 cup Milk (2% is better, 1% works)
  • 6 tbsp Butteror margarine
  • 2 Large eggs
Instructions
  1. In bowl, with wire whisk, stir flour, sugar, baking powder, and salt. Mix well.
  2. Add milk, butter, and egg and stir until flour is moistened (try to smash up the butter into as small as clumps as you can).
  3. Heat griddle or 12-inch skillet over medium heat until drop of water sizzles. I like to use heavy duty cast iron pans, it is easy to over heat the pan which is easy to burn the non-stick coating of expensive pans.
  4. Brush lightly with oil or cooking spray. Pour batter by scant 1/4 cups onto hot griddle, making a few pancakes at a time. Cook until tops are bubbly, some bubbles burst, and edges look dry. With wide spatula, turn and cook until underside is golden. Transfer to platter; keep warm.
  5. Repeat with remaining batter, brushing griddle with more oil if necessary.
