Shepherds Pie


This is a staple in our families dinner routine. It is fairly easy to prepare, and take little time to cook.

Ingredients:

  • 1 1/2 lb mashed potatoes
  • 1 lb ground beef
  • 1/2 cup cheese
  • 2 cups of frozen vegetables (peas and corn, sometimes carrots)
  • 3/4 cups of beef broth or use 1/2 package of oxtail soup mix with 1 pint of water.

Directions:

  1. Cook potatoes and mash, set aside.
  2. Pre heat oven to 375 degrees F.
  3. Cook the ground beef.
  4. Add vegetables and beef broth to meat, and cook until vegetables are cooked.
  5. Spoon meat and vegetable mixture into an 8” baking dish.
  6. Cover with mashed potatoes and top with cheddar cheese.
  7. Place in oven and bake for 20 minutes or until heated through and cheese is melted.
