This is an excellent topping for french toast or pancakes. Makes enough for one batch of pancakes (about 8).
Ingredients:
- 1/2 cup water
- 1/2 cup white sugar
- 2 cups chopped strawberries (frozen or fresh)
- 1/4 Tbsp vanilla
- 1 Tbsp cornstarch
Directions:
- Place water and sugar in small pot.
- Bring to a boil stiring occasionally to dissolve sugar.
- Add fruit and turn down heat to medium, cook for 10 minutes.
- Dissolve cornstarch in a little bit of water (just enough to dissolve the water)
- Turn heat to high and slowly stir in dissolved cornstarch to thicken mixture.
- Serve with fresh french toast or pancakes.
